The prohibition-era cocktail emerged in the USA of the 1920`s when all alcohol was strictly forbidden by law. The production and distribution of alcohol went underground and numerous speakeasies sprung up to accommodate the demand for illegal liquor. These speakeasies had very limited access to good, quality alcohol, taking what they could get and hence they often would try to cover up the taste of the booze with fruit juice & sweeteners – hence the birth of the prohibition-era cocktail.
