50ml – Bermondsey gin
25ml – Fresh pea juice
10ml – Rich spearmint syrup
3 drops – MoM wormwood bitters
–for the pea juice: Freeze peas then soak in hot water before passing through a microjuicer. -for the syrup: Blanch mint leaves then place in an ice bath. Muddle leaves gently with sugar, once sugar is all humid, add to water at (2:1) sugar:water ratio. -for the cocktail: Add all ingredients to shaker, shake and double strain in a chilled coupette. Garnish with a curly peashoot.
