See it as a kind of alcohol-based advent calendar, if you wish. We’ve rounded up some of the best Chrismtassy cocktails to tempt you out into the December night for a jolly, holly knees up. So, what’s behind door number one?

MISTLETOE AND PINE

Those clever mixologists behind the renowned cocktails at Paramount – the sensational bar and restaurant at the top of Centre Point, London – have created the perfect festive cocktail to enjoy sky-high during the season of good cheer. The Mistletoe & Pine contains pine-infused Bombay Sapphire gin, mixed with a splash of Pimento dram, freshly squeezed lemon juice, cinnamon syrup and an egg white. Available throughout December, enjoy the perfect winter warmer watching London’s glistening Christmas lights below.
And why not wow your Christmas guests by recreating the Mistletoe & Pine at home with this recipe (serves two):

Ingredients:
Four small pine branches – two for garnish

100ml Bombay Sapphire gin
20ml Pimento dram liqueur
30ml cinnamon syrup
50ml apple juice
50ml freshly squeezed lemon juice One egg white

Method:

For the infusion, leave a small branch of pine in a bottle of gin for five days, rolling the bottle once a day, then remove the pine.
Mix 100ml of the pine-infused Bombay Sapphire gin with 50ml of freshly squeezed lemon juice, 30ml of cinnamon syrup, 50ml of apple juice and one egg white. Strain and pour the cocktail into two martini glasses.
Pimento dram can be gently poured on top, to create a layer at the bottom of each glass. Garnish with a small branch of pine dusted with icing sugar, sip, and enjoy a true taste of festive spirit!
