Spring cocktails have the unique opportunity to take advantage of fresh ripe fruits plucked from the vine during peak season. Strawberry Spring Punch combines lush, sweet strawberries with aromatic rosemary and a hint of spicy ginger. The result is fresh, clean sweetness that lilts over the tongue.

Strawberry Spring Punch

Makes 12 – 4-1/2 ounce serving

Strawberry Spring Punch by Cheri LoughlinIngredients

1-750ml Bottle Strawberry Vodka or Rum

6 ounces Fresh Lime Juice

2 ounces Simple Syrup

16 ounce package Fresh Strawberries

20 ounces Ginger Ale

6 to 8 Rosemary Sprigs

Candied Ginger Disks Garnish – Optional

Method

Clean and hull fresh strawberries. Cut into quarters. Place in large pitcher. Pinch fresh rosemary sprigs to release essential oils. Place in pitcher. Add strawberry rum or vodka, lime juice and simple syrup. Stir gently. Cover. Refrigerate for at least 4 hours or overnight. Remove rosemary before serving.

To serve from pitcher: Add 20 ounces ginger to pitcher just before time to serve. Stir gently. Pour approximately 4-1/2 ounces Strawberry Spring Punch into large rocks glass or decorative glasses over fresh ice. Add a few strawberries from the mixture to each glass. Garnish with candied ginger disk if desired.

For individual serve: Place 2-1/2 ounces punch mixture into large rocks glass over fresh ice. Add a few strawberries from the mixture to the glass. Top with 2 ounces ginger ale. Garnish with a candied ginger disk if desired.
