Plum & Vanilla Fizz

The Ingredients

37.5 ml Gin, 25 ml Double Cream, 25 ml Plum and Vanilla Purée, 12.5 ml Lemon Juice, Full Egg White, Dash of Soda

How To make a Plum & Vanilla Fizz

Add all ingredients, except soda, into Boston tin. Shake ingredients hard and fast for 15 seconds without ice to emulsify the egg white. Add ice and shake hard for another 15-20 seconds. Add a dash of soda to a chilled Collins glass. Pour cocktail over the soda so that it “fizz’s” up through the drink. To garnish, dip a straw or stirrer in red food colouring (unflavoured) and stir a ring around the centre of the glass going out.
