50 ml Light Rum, 20 ml Peach Puree, 20 ml Lime Juice, 12 1/2 ml Sugar Syrup, 12 Mint Leaves, Top-Up Soda Water, Mint Sprig
Gently muddle the mint and the rum in the glass. Add the other ingredients and lots of crushed ice. Top up with soda water, churn well, garnish and serve.
