37 1/2 ml Light Rum, 12 1/2 ml Dark Rum, 20 ml Lime Juice, 12 1/2 ml Sugar Syrup, 8 Mint Leaves, 1 dash Old-Fashioned Bitters, Top-Up Champagne.
Muddle the rum with the mint. Add the lime and syrup. Shake thoroughly, strain into a chilled Champagne flute and top up with Champagne.
A great summer sipper, which is basically a pimped-up Mojito. This drink has a fantastic orange hue which we love.
