Absinthe production uses three main ingredients: green anise, florence fennel and grand wormwood. Absinthe is prevalent in historical literature and was enoyed by figures such as Vincent van Gough, Oscar Wilde and Ernest Hemmingway. It has the nickname of la fee verte (the green fairy).

The popularity of Absinthe has grown in recent years and it is used in many great cocktails, such as the Sazerac, the Yellow Fairy and The Monkey Gland.
